Peach Salsa

Trying to figure out what to make for dinner is a never-ending problem, right? Yesterday was hot, mid-90s, so I didn’t want to use the oven. I didn’t really feel like grilling either, and thought that crab cakes would be a perfect solution. There is a local store here that sells pretty good crab cakes, all you have to do is take them home and cook them. Usually when I make crab cakes, I serve them with green salad, but sometimes a person gets tired of green salad. I knew that I didn’t want coleslaw either, so I did an internet search on ‘what to serve with crab cakes’, and came up with a list of options at Southern Living. The one that appealed to me the most was this one, for a delicious looking peach salsa. I followed the recipe pretty closely, except that I used nectarines instead of peaches, I used 3/4 tsp of salt instead of 1 tsp, and I used the juice of 2 limes because I like lime. I only zested one.

This was a hit, we all really liked it. It would be nice with chips, nice on chicken or fish, heck, it would probably be nice on grilled steak. I liked it on my crab cakes instead of my usual tarter sauce. I rounded out the meal with a quinoa/edamame salad from the store’s deli. Perfect meal for a hot evening when you have put in a full day and want something easy but tasty.

Ingredients

  • 3 medium-size fresh peaches (about 1 ¼ lb. total), pitted and diced
  • 1/2 cup finely chopped red onion (from 1 onion)
  • 1/2 cup quartered multicolored cherry tomatoes
  • 1/4 cup packed chopped fresh cilantro leaves
  • 1/2 small serrano chile, cut into thin rings
  • 1 teaspoon grated lime zest plus 2 Tablespoons fresh juice (from 1 lime)
  • 1 teaspoon kosher salt
  • 1/4 teaspoon chili powder

Directions

  1. Mix ingredients: Stir together peaches, red onion, tomatoes, cilantro, serrano, lime zest, lime juice, salt, and chili powder in a medium bowl. Let stand 5 minutes at room temperature before serving, stirring occasionally.

    Yay! A comment box! I love crab cakes but it’s been a long time since I’ve had one. That peach salsa sounds delicious and I think it would be great with pork or chicken, too.

      Zazzy, I am not sure what was going on with the comment box for you, very strange. Glad it’s working now! And how could I have not thought of pork for the peach salsa? It would be PERFECT. I think I’m going to try that next week, after I get some nectarines from the Farmer’s Market this weekend. The ones we had were OK from the grocery store, but they will be a lot better from the FM.

    I have never made peach salsa before but I am now living in a place where fruit like peaches is plentiful! You know what, I am going to the farmer’s market today specifically to buy peaches to make this. Will report back!

    And you are SO right; it is a never-ending saga to figure out what to eat each day. Speaking of which…it’s supper time and I have nothing planned. *Facepalm* Maybe my husband will figure it out?

      Elisabeth, the struggle is real! I think if it were left to me alone, I would eat cheese and crackers and fruit every night, sometimes a salad, and be done with it. Darn these people wanting actual nutrition.

      Ally, I think you will like it. I like nectarines for this recipe because I don’t like the furry peach thing. But one could certainly peel them if you prefer that, or just kind of scrubbed them off. It’s really tasty!

    I love crab cakes! This looks so fresh and summery and flavorful! I have never made a peach salsa but I love mango salsa, and I bet peach goes really well with a lot of different proteins.

      Suzanne, I think this would be good on anything that you would like with mango salsa. I went to the Farmers Market today and got some nectarines so I can make it again. They’re not quite ripe yet though, so I have to be patient.
