Mayonnaise Turkey

We’re having Thanksgiving at our house this year. There will be 8 of us (2 of whom are vegetarian), and I’m making 2 turkeys. We do this every year, to ensure enough leftovers. Ted was reading the New York Times the other day, and they had a recipe for Thanksgiving Turkey, where you dry-brine it, and give it a mayo treatment. Why not (aside from the fact that I am not fond of mayo as a condiment, but why not rub it all over your turkey?) However, while we do have a subscription to the NYT, access to their recipes is a different subscription, which we do not have. Facebook to the rescue! A friend of mine has that subscription, and sent me the recipe. I wanted to copy and paste it in here for you, but the formatting came out all wonky and with the block editor it was more than I could manage. I roasted the first turkey this afternoon. We do 2, and I will slice this one and divide it up for leftovers, and have it ready before tomorrow. I also made cranberry sauce, sweet potato pudding, dressing, shrimp cocktail, and started the gravy. Plus worked about 5 hours before leaving early. I’m beat. I hope the turkey is delicious, we shall see. Happy Thanksgiving to all who celebrate!

    Well, I love mayo to begin with so…this could be information I never knew I needed before now. I’m very intrigued!

    Happy Thanksgiving. Also, I think it’s brilliant to cook a turkey up a day early! If you know you want leftovers which are just destined for the fridge anyway, why not be proactive about it and relieve a bit of pressure for the actual Thanksgiving holiday. Genius.

    I often marinate chicken with mayo and curry. It’s a great way to add moistness and ensure the flavour stays ON the meat. Happy Thanksgiving!

    An interesting twist on the turkey-marinate… I’d have never thought of using mayo (although I do like the condiment). Curious to hear how it turned out (unfortunately, the link doesn’t work anymore – says it’s expired).
