Dinners Last Week
Last week, we saw a drop in temperature. Monday and Tuesday were not hot, no a/c needed, but they were warm enough that I didn’t want to turn on the oven if I could help it. Wednesday cooled off enough for soup weather. Yay! Soup weather!
- Monday – White Bean Tuna Salad This is a go-to around here, when we can’t think of what to cook, especially when it is warm outside. Delicious, easy, and healthy. Win/win/win. This is a recipe from Giada at Food Network. Modifications for my family’s needs: None.
- Tuesday – Soft Shell Chicken Tacos – I guess I pulled the picture in from the original site way back when, and now it’s gone. Anyway, it’s a staple around here. Modifications for my family’s needs: Low carb tortillas and vegan cheese for Ted, fake chicken for Maya.
- Wednesday – Red Lentil Soup with Warm Spices. Yay! Cool enough for soup! I love this recipe. It’s delicious and comes together easily. Don’t skip the lemon juice. Modifications for my family’s needs: I roasted some chicken and shredded it for Ted, and cooked some fake chicken for Maya. They added these to their soup. I like it straight, with some toasted sourdough.
- Thursday – Pork Chops and green beans, or pasta with pesto, peas, and tomatoes. We had some green beans in the fridge I wanted to use, as well as some pesto. The pork chops were for Ted, the pasta for Maya and me. I had an idea to carry some of the same flavors from the pasta over to the green beans, so I heated up the pesto, sun dried tomatoes, and cherry tomatoes, and tossed some with the green beans for Ted. The rest I tossed with the pasta and peas for Maya and me. Modifications for my family’s needs: plenty, this was a 2 dish evening.
- Friday – Takeout – Pizza for me and Maya, and Chicken Marsala for Ted. Yum!
- Saturday – I was craving a baked potato. Ted cooks on weekends, so he made lamb chops, Brussels sprouts, and potatoes (baked for me, mashed sweet potatoes for him.) Modifications for my family’s needs: He bought sushi for Maya.
- Sunday – Mediterranean Feast – This is a meal we put together sometimes, with chicken, dolmas, hummus, pita, vegetables, spanikopita, sometimes salad, and sometimes tabouli. Always easy, and no modifications needed, we all just take what we want.

I’m using up the last of my pesto this week, too. We had flatbreads with it on Friday, but this week I’ll toss it in pasta with tomatoes and mozzarella. I really hate to see the end of it; it was a bang-up summer for my homemade pesto.
Our weather has turned cold, cold, cold and rainy. Baked potatoes sound so good. Rick and I have them as an entree, loaded with broccoli and cheese. And he’s been asking for meatloaf, so I’m sure that’s going to be on the menu, too.

Mmmm. Homemade pesto. YUM. Ted made meatloaf a week or so ago, and froze half of the mix, so all I have to do is thaw it out and put it in the oven. Guess what’s for dinner tonight?

We were into Mediterrean flavors last week too. Z-D made hummus and tzatziki sauce and a roast chicken deal that was Greek-ish. Toss in feta and some black olives and pitas, and it was yummy. That cuisine never fails to make me happy.

Soup weather is the best beather. it is getting chilly here in Germany so I am planning to make some green bean soup – which is actually more a summer soup but who cares.
I am in need of some easy healthy recipes so I will check back a few weeks to see if something. would fit the taste buds of the husband….

I love soup weather too! However, I think the first thing I am going to make is that salad, as I have most of the ingredients and can improvise with the others (I think I have a bit of romaine left over)! It looks delicious!

Your menu this week is peak sophistication compared to mine. It’s been a really busy few weeks and I always feel like crap the week of the time change. I have chicken curry from the freezer on the menu and today I came home and microwaved a box of Kraft Dinner and chopped up a red pepper.
The lentil soup sounds really good! I have a girls’ cottage weekend coming up that I usually bring red curry squash to, but I might try this instead.

Oh, if you bring the soup, I hope everyone loves it. Remember the lemon, and the spiced butter. SO GOOD.
